Let me answer my own post -- I found doPDF 7 on OldVersion.com, and I can confirm that it doesn't have this unwanted behaviour.

Hello I'm not 100% sure but I think the previous version of doPDF did not turn e-mail addresses automatically into hyperlinks unless the e-mail address was a hyperlink in the source file (e.g. if it was a link in MS Word). The latest version of doPDF, I discovered today to my dismay, converts e-mail...
