It is sometimes necessary to email documents to clients, however, when I create the original document there are multiple segments to it. I would like to exclude certain "for office use only sections" prior to emailing the remainder to my clients.
How can I do this?

It'll depend on the application from which you will be printing your PDF.
In the Print dialogue, most applications will offer the option to print the whole document, the selected page, or a range of pages.
Experiment with this last option by specifying the pages you need.
E.g.
5-8 (prints pages 5,6,7,8)
1,2,5,7 (prints pages 1,2,5,7)
1-4,7-9 (prints pages 1,2,3,4,7,9)
As you can see, you can mix and match here.
